"We sort, roast, crack, winnow, grind, and conch small batches of beans. Then we temper, mold, and wrap each bar in gold foil and recycled cotton paper. By sourcing high-quality cocoa and carefully crafting single-origin chocolate, we bring out the nuances of each bean.
These beans were grown by producers across Ecuador ad fermented by Vicente Norero. To mellow the beans' natural tartness and deepeb their chocolatiness, Eric applies a medium roast and an extended conche time in the factory."
These beans come from Camino Verde Cacao, located in central Ecuador in Duran (near Guayaquil). Vicente Norero buys freshly harvested, unfermented beans from over one hundred farms and associations around Ecuador, and aims to achieve their optimal fermentation and drying, imbuing the beans with nutty notes.
